Valentine's Day treats: Chocolate Marshmallow Heart Cakes

The title is crazy, right? I KNOW. I was racking my brain trying to think of something heart shaped to make, and I just couldn't think of anything. Then I remembered how much I LOVE chocolate ganache.

The first time I made chocolate ganache was for my mother in law's birthday a few years ago, in the pre-Bennett years. I made a really moist chocolate bundt cake, covered in a chocolate ganache and it was a HIT. It really really was so good.... I'm not tooting my own horn, I'm serious! It was amazing, I put that recipe in my recipe book, I loved it.

And because of how much I loved that cake, I tried to think how I was going to combine hearts and ganache, and this is what I came up with. These little cakes did end up falling apart on me a bit, because the cake recipe I followed, which was from Pioneer Woman, called for a large jelly roll pan, and I only had two medium sized pans, so I had to split my cake batter in two parts. The larger of the two cakes was thicker and it cracked a bit more than the thinner, slightly smaller cake. It really helps holding the cookie cutter in place, and packing the little crumbs in there, to help hold the shape.

I made it work, though. The chocolate sheet cake recipe from Ree Drummond is so moist and tasty! It made it a bit easier to pack the small torn pieces back together when the hearts were falling apart.

I will say, this was my first attempt at anything like this, so a few of my hearts were messy, but my husband LOVED them... that's all that matters, right? :)

Well, here it is, my delicious heart shaped, marshmallow fluff filled, chocolate ganache covered cakes. I hope yall enjoy!

----Chocolate Marshmallow Heart Cakes----
(cake recipe from Pioneer Woman)

Chocolate cake:

2 cups Flour
2 cups Sugar
1/4 teaspoon Salt
4 Tablespoons (heaping) Cocoa powder
2 sticks Butter
1 cup Water (boiling)
1/2 cup Buttermilk (see below for a substitute)
2 whole Beaten Eggs
1 teaspoon Baking Soda
1 teaspoon Vanilla

Filling:
Marshmallow Fluff

Chocolate Ganache:
1 cup chocolate chips
1tbsp butter
1/4 cup heavy whipping cream

Sift together flour, sugar, and salt in a large bowl. Set aside.

In a small saucepan, bring water to boil. In another small saucepan, melt butter, and add cocoa, and stir until the cocoa is dissolved. Then, add the boiling water and let the mixture boil for 30 seconds, then, add it to your dry ingredients. Be careful not to burn yourself. Stir the mixture until well combined.

In a small bowl, mix buttermilk, baking soda, vanilla and beaten eggs.

**IF YOU DO NOT HAVE BUTTERMILK** put about a tablespoon of lemon juice into whatever size measuring cup you need for buttermilk, and fill it the rest of the way with regular milk. Stir it around, and let it sit for 5 minutes before adding it to your ingredients.

Add milk mixture to your cake mixture. Stir to combine.

*Pioneer Woman's recipe called for an 8x 13 jelly roll pan, I just used two medium pans instead.

Grease your pan, and pour in your cake batter. Bake at 350 for 20 minutes. (Unless, you are using two pans, like myself.... my smaller pan took 12 minutes, and my larger one took 17)

Allow your  cakes to cool before overturning them onto parchment paper.

Meanwhile, melt your chocolate in the microwave, at 30 second intervals. Then, add the very warm cream, and the butter, and stir. If you are not going to be working quickly, which I wasn't, You can start a double boiler, and put your chocolate in there, to keep it smooth enough to continue working with.

Cut your heart shapes out using a cookie cutter, and lay them on a cooling rack, with an empty pan underneath, to catch the chocolate drippings. Lay each heart out flat, and add a thin layer of marshmallow fluff, trying not to go too close to the edges, to prevent overflow.

Put the second heart on top of the marshmallow layer, and coat with chocolate ganache. Once you have your hearts covered how you'd like them, allow them to set a bit, before serving.

* This ganache recipe does not bring the chocolate to a hardened state, so this is more of a fork and plate kinda cake. If you'd like the chocolate to set up, leave the cream out.*

And voila! These babies are soooo good! I hope yall enjoy these as much as we have :)

Valentine's Day Cookies: M&M and Chocolate chip

Okay, so I'm back a day or two later than I had anticipated. We have a sick toddler on our hands in the Luster household. Bennett has been very sick the last two days, which put a hold on baking/cooking for me. But he was getting a bit bored today, and when I asked if he wanted to help me make cookies, he practically jumped on the counter. hehe

These cookies are made with the same exact recipe I use for my chewy chocolate chip cookies, the only change I made was instead of two cups of chocolate chips (1 small bag) I used one cup, and substituted red, pink & white M&M's for the other cup of chocolate.

I also put a few drops of red food coloring gel in the second half of the batch, but you can't really tell unless the cookies are side by side. I guess coloring desserts isn't my strong suit... could be worse, haha.

I'm quite excited to keep getting recipes out for Valentine's Day ideas for y'all! We found a new mall here, or new to us, because we had driven past it probably 100 times and had NO idea it was a mall! I found a chef/baking store there, and got some pastry bags, and piping tips and a cookies cutter. I'M SO GIDDY ABOUT IT! :) Stay tuned y'all, fun stuff to come....

----M&M Chocolate Chip Cookies----
yields approx 30 medium cookies

2 cups all purpose flour
1 cup pack brown sugar
1/2 cup white sugar
1 egg (yolk, and white) PLUS 1 egg yolk
3/4 cup unsalted butter, melted (if you have salted butter on hand, just omit the pinch of salt)
1 tsp vanilla extract
1/2 tsp baking soda
pinch of salt (only if using unsalted butter)
1 cup chocolate chips
1 cup Valentine's Day M&M's

Preheat your oven to 325F. Grease your cookie sheets, or line with parchment paper. I used a paper towel with some room temperature butter, and rubbed down the cookie sheets. I find this works well enough, that I don't have to re-apply any butter or cooking spray between batches.

Cream together melted butter, brown sugar, and white sugar. I used my kitchen aid mixer, BUT I usually just make this recipe with a good ol' bowl and wooden spoon. Just made sure all the lumps are gone, and everything is well incorporated.

Add your egg, egg yolk, and vanilla, and mix well to combine.

In a seperate bowl, sift together flour, salt and baking soda. I already stated this in the ingredients list, but if you chose to use salted butter, just omit the salt. Once all your lumps have been sifted out, add the dry mixture to the mixing bowl & combine.

Once the cookie dough has come together, stir in the chocolate chips and m&m's by hand.

Scoop small mounds of cookie dough onto the baking sheets, leaving an inch or two between the cookies, because they will spread. Bake for 15-17 minutes, rotating cookie sheets half way through.

Once cookies are done baking, let them cool for two minutes on the pan before transferring them to a cooling rack!

I did add some red food coloring gel to the second half of the batter, just for a little more pink Valentine's Day love. :)

Hope you enjoy this recipe, and feel free to use this recipe with ONLY chocolate chips! This is my favorite chocolate chip cookie recipe EVER.

TIP: I keep a bowl next to my work space, so I can throw trash into while I'm baking. Or as Rachel Ray would call it, a GB..... no?.... no...? Anyone? LOL Well, here's my GB. :) Easy clean up!

Valentine's Day Puppy Chow

Hey all! I'm STILL in the process of editing the tamale blog... it's driving me crazy... So in the mean time, I thought I would come out with a few blog posts about treats to make for VALENTINE'S DAY :)

This first post is really simple, but I felt like I needed to hurry up and get something on this baby! We've had visitors here for four out of the last five weeks, and I have yet to get the house back to normal. But regardless, I won't neglect you any longer, here is a recipe for some Valentine's Day Puppy Chow!

A few simple ingredients, and you have yourself a little treat for your loved ones. I'll probably send mine in a few small batches with Will, in his lunch. He'll like that :) Feel free to add more sweets, like heart sprinkles, or chocolate chips. I kept it simple with the pink and red m&m's.

----Valentine's Day Puppy Chow----

4 cups Chex cereal
1 heaping cup white chocolate melts
1/2 tsp shortening (just helps keep the chocolate smooth)
red food coloring
3/4 cup powdered sugar
Valentine's day M&M's (or any other holiday candies)

In a medium microwave safe mixing bowl, put your heaping cup of white chocolate and your 1/2 tsp of shortening. Put your bowl in the microwave on the lowest setting, OR defrost setting for 30 seconds at a time, stirring in between sessions. After 90 seconds, do 15 second increments until your chocolate is smooth. Then stir in as much red food coloring as you want.

I did three drops thinking it would be plenty, but once the powdered sugar is on these babies, you could barely see my coloring, so I'll say atleast 4 or 5 drops.

Once the chocolate is stirred and smooth, add 4 cups of chex cereal to the bowl, and carefully fold them in, making sure to coat all the cereal evenly.

In a large gallon ziplock bag, add 3/4 cup of powdered sugar. Pour the cereal mixture into the bag, seal it, and carefully shake, making sure you're not crushing all the cereal.

Finally, pour into a bowl, or a clean zipper bag, and add as many pink and red M&M's as your little heart desires :)

THAT'S IT! So easy, right?

I hope y'all try this out, I think it's a tasty alternative to the traditional puppy chow recipe, although I do love my peanut butter ;)

ENJOY! I'll be posting another recipe tomorrow *hopefully!

Busy Busy Busy!

My apologies to those of you waiting on a new blog post! I have been so busy lately, I haven't had time to finish a recipe post! I have the post for my tamales started out, but haven't uploaded any pictures or anything! I will (of course) let everyone know when that post is done!

above: Bennett & Daddy hanging out at secret beach

We have been all over the place lately! One of my best friends, Gia, and her (new) hubby came to visit & got married since they've been here! SO so fun! & so happy for them :) We went to the Ko'Olina lagoons, and they had their ceremony at Secret Beach, a few lagoons over from where we did our family pictures this past September! They also used Aubrae', the same photographer that did our family pictures! She is THE BEE'S KNEES! I'm telling you, guys! ( If you're on Oahu, and are interested in family pictures, engagement pictures, maternity pictures, ANYTHING, just facebook her! Aubrae' Hokom Photography)

ALSO---- I made Gia an appointment with my FAVORITE hair stylist on the island, Chantell Hodge, you can check her out on fb as well, on her page Fringe by Chantell. She's seriously awesome, she does my hair, and she did Giovanna's hair for her ceremony & it lasted all night! So perfect!
above: Gia's hair at 9pm the day of the ceremony. She had her hair done 8.5 hours before this!!

We hiked the Lanikai Pillbox trail, we went to Hickam beach, and as previously mentioned, the Lagoons, for the ceremony. We also went snorkeling at Hanauma Bay! Well, let's be serious, they snorkeled, and I sat in the sun playing with Bennett. & I almost forgot, we stopped at the blow hole by sandy beach before Hanauma bay & everyone jumped off the rocks into the water!
above: group picture taken on the pillbox trail. Bennett slept almost the entire time!

above: down in the 'blow hole'. if you look closely, you can see Will, Dylan, Nick and Gia

The swap meet at aloha stadium was a good stop too, we were there for almost two hours, and I know Nick and Gia picked up lots of goodies!

We never really realized how much stuff there is to do here, until we had guests come to visit. They were here 9 days and I feel like there is absolutely NO way we would be able to see and do everything, EVEN if we did three or four activities a day!

We also ate at Cheescake factory this past week (which is not even a highlight, but it was delicious) and the wait in downtown Waikiki was over an hour and a half, on a Monday night! It was crazy! But, Hawaii is a vacation spot year round, because the weather is so nice here, so it makes sense!

Enough rambling, I will try to finish my tamale/ posole posts once Will gets home from work! Hope everyone is having a great day/week/ NEW YEAR! woooo!
